
Making salami with game is a typical tradition of the Trentino valleys. The Fratelli Corrà produce this salami from the front cuts of wild boar which, although not widespread locally, is one of the best-known meats among game in Italy. In the fatty part of the dough, it is made up of pork belly, while lean one is made up of front cuts of wild boar. It should be enjoyed sliced, even thick, on its own or in mixed cutting boards.
