Making salami with game is a typical tradition of the Trentino valleys and even today the Corrà Brothers follow the ancient family recipes to produce this fine-kneaded salami in which the fatty part is made up of pork belly, while the lean one from the front cuts of deer.
It is also produced in the version enriched with whole grains of green pepper that cover it outside giving it colour, scent and aromas.
It should be enjoyed sliced, even thick, on its own or in mixed cutting boards.
