The fields where the fodder to feed the cattle comes from must be left fallow and with no treatments for 4 years before the hay for the animals can be harvested.
This is the most distinctive feature of our Organic Parmigiano Reggiano, entirely natural and with the unmistakable flavour typical of our cheese.
It is available in two versions: from Friesian milk and from Braunvieh milk, of which we are the only producers in Italy.
