DESCRIPTION: The Lentils of Castelluccio di Norcia are characterized by the place where they are born, at an altitude of about 1500 m above sea level, with rather severe winters and spring frosts that last until June.
The dimensions of the seeds are rather small, with a diameter of about 3/4 mm, and with a rounded and flattened shape. It has a brindle appearance with the colour ranging from green to light brown.
The peel is particularly fine and tender and this allows the product to be cooked directly, without it being soaked as happens with other legumes.
The Castelluccio lentils are a food characterized by a high content of protein, a good amount of sugars and an almost nonexistent presence of fats. They are rich in vitamins, minerals and fibre, which are useful for blood pressure.
