For our sauces, we only use fresh tomatoes grown in an open field. We harvest the tomatoes one by one in July and August and process then after a few hours from harvest. We adopt a slow and gentle processing method, with lower yield but excellent results: tomato colour remains crisp and bright, the flavour is the one you always found in grandmas sauces, it is full-bodied, compact and thick. We do not add salt, just a leaf of fresh basil. La Rustica is an “evergreen”, a true tomato sauce with defined and full-bodied flavour for perfect adherence to pasta. It is the sauce to have always handy in the pantry for a quick dish or to prepare dishes that are part of the Italian popular tradition.
