Quader De Cavra is a soft cheese with a washed rind that is obtained from full cream goat’s milk. Carozzi selects the milk from the Lombardy Region because historically the rearing of goats has deeper roots. The rind is smooth, thin, soft and pinkish yellow in color. The pale white paste is slightly soft and rubbery. The taste is rich and sweet, yet slightly acidic with a mild taste typical of goat cheese. After 35 days of maturing in Pinewood boxes the cheese is ready to be consumed. Recommended Use: The cheese can be consumed with just the simple addition of Extra Virgin Olive Oil, Salt and Pepper, melted in a pasta dish or on a pizza.
