Traditional anchovy syrup produced in Cetara with anchovies fished in the Gulf of Salerno. The anchovies mature in chestnut wooden barrels, only with salt, for over 12 months. Salty but balanced, it enhances the dish. It is the main ingredient of the traditional recipe of Spaghetti with Colatura, olive oil, fresh garlic and chilli.
