The anchovies Cantabrian purchased directly from the vessel, selecting only anchovy with freshness and optimum size. They are seasoned and packaged in traditional brasses and remain in cure for a minimum of 20 months. Anchovy fillets are made in a traditional and artisan way. There are three fundamental factors in the elaboration of a good anchovy: a prolonged maturation at natural but controlled temperature, an adequate washing of the salted anchovy that allows us to regulate our point of salt and finally a filleting done "thoroughly" to cut and eliminate all the thorns.
