DESCRIPTION: Valtellina Casera is a name controlled cows milk cheese from the province of Sondrio in the Italian region of Lombardy. Made using pasteurized milk that is partially skimmed, this cheese is cylindrical and shape and aged for 1-2 months. Aged to develop a semi-firm consistency, its pate is ivory coloured with a scattering of small eyes. Its flavour is dense and nutty and is a perfect substitute for more traditionally known cheeses of this kind such as Montasio or Piave.
