This cheese undergoes the same ageing treatment in fermenting fruit and wine exactly the same as all other drunken cheeses. The wheels, early seasoned for 6-7 months, are dipped into vinasses and Amarone wine for a further 3 months, after that they are wrapped in burlap and left to dry for about 7-8 months. This process allows the cheese to soak up all the flavor and different matured fruit nuances, which exclusively belong to Amarone which is the King of wines. UBRIACO ALL’AMARONE It is a whole cow’s milk, matured from 14 to 17 months, with wheels weighing approximately 7-8Kgs. Its delicacy, taste and scents, which recall the softness of the hill landscape of Verona,are impossible to describe in any precise detail. This cheese is perfect for serving at the end of the meal,its perfect accompaniment being a cigar and a glass of Amarone.
