The methods vary from region to region in terms of their environment, climate, feeding structure and curing technique. Lardo from Colonnata, salami produced between Ancona and Pescara, savoury pork Mortadella from north of Bologna to black Nebrodi products with a closed chain and an exclusive Salame from a Messina farmhouse as well as fiery Nduja and black pig Guanciale from Calabria.
